Do you know your Braeburn from your Ball's Bittersweet?  Or your Dabinett from your Discovery? Apples can be as different and diverse as humans - the same species, but really quite different in appearance, aroma and taste!

In this second session Gabe explores the key components within apples that contributes towards their differences - acidity and tannin - and shows how the magical technique of grating was developed thousands of years ago to capture and transfer desired characteristics for future generations.
